You will need...
- 2-3 boneless and skinless chicken breasts
- 2 cans of Ro-Tel Lime and Cilantro
- 1 can of black beans drained and rinsed (I do the low sodium ones)
- 1 can of kidney beans drained and rinsed (I do the low sodium ones)
- 1 can of corn
- 1 onion chopped (I skip this....I don't care for onions)
- 2 cans of low sodium chicken broth
- 1-2 cups of water (The first batch I made with 1 cup water, now I don't use any....)
- 1 Tbsp Garlic Powder
- 1 Tbsp Ground Cumin
- 1 Tbsp Dried Cilantro
Throw that all together in your crock pot and cook on high for 6-7 hours or low for 8-9 hours. Then serve with tortilla chips, sour cream and shredded cheese. This recipe leaves my household with plenty of left overs as well:) I make this a lot right now since my Zumba classes are during dinner time. So easy and very tasty! Enjoy!!!!!
