Chicken Tortilla Soup...

So I stumbled upon a recipe on Pinterest that has been a huge hit with my family and the few people I have shared it. I figured I would go ahead and post it here too and on the other blog I'm a part of. What Mom doesn't love a tasty and easy recipe?!?!?! The best part....you make it in the crock pot!!!! As close to effortless meals as it gets!!!!

You will need...

  • 2-3 boneless and skinless chicken breasts
  • 2 cans of Ro-Tel Lime and Cilantro
  • 1 can of black beans drained and rinsed (I do the low sodium ones)
  • 1 can of kidney beans drained and rinsed (I do the low sodium ones)
  • 1 can of corn
  • 1 onion chopped (I skip this....I don't care for onions)
  • 2 cans of low sodium chicken broth
  • 1-2 cups of water (The first batch I made with 1 cup water, now I don't use any....)
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Ground Cumin
  • 1 Tbsp Dried Cilantro
Throw that all together in your crock pot and cook on high for 6-7 hours or low for 8-9 hours. Then serve with tortilla chips, sour cream and shredded cheese. This recipe leaves my household with plenty of left overs as well:) I make this a lot right now since my Zumba classes are during dinner time. So easy and very tasty! Enjoy!!!!!
